Jerk Pork Pepperpot
August 27th, 2008 | by Sean |So, I had a lot of jerk pork leftover from last weekend’s camping trip — long story — and I wasn’t really sure what to do with it. I really nailed the seasoning, but unfortunately it wasn’t the best cut of pork I’ve ever bought. And then it came to me…. jerk pork pepperpot. This follows no particular recipe but brings in bits and pieces from recipes I’ve seen, including a bit of casareep from a jar I don’t even remember buying. Basically it’s jerk pork fried up with some onions and garlic and a bit of pimento (allspice), and then I threw in chopped swiss chard (hard to find callaloo here), some sweet cassava, carrots, and a few other things. Added good Jamaican boiled dumplings to it, and the result was this:
